Start with the tea
Yum cha literally means 'drink tea'. Choose your pot first — a mellow aged pu-erh to cut through richness, or fragrant chrysanthemum for a lighter table. Tap two fingers on the table to thank whoever fills your cup.
Order in threes
Balance a steamed basket, something fried, and a bowl to share. Har gow and siu mai are the anchors; a baked char siu pastry brings the crunch; a congee or claypot rice keeps the table grounded.
Take your time
The point of yum cha is not the food alone but the hours around it — conversation, laughter, a second pot of tea. In a fast city, this is the table that asks you to slow down.
